Quick and Easy Salmon Teriyaki

Salmon Fillets
Olive or vegetable oil to coat the grilling surface
Simply Boulder Truly Teriyaki

Place salmon in a plastic bag with enough Truly Teriyaki to coat the salmon. Refrigerate for 20 to 30 minutes. Remove salmon and discard marinade.

Preheat grill or broiler. Use a crumpled paper towel to coat the grilling or broiler rack with oil to keep from sticking to the salmon.

Place the salmon skin side up on the grill and cook for 4 to 5 minutes. Flip the salmon and brush some teriyaki on the cooked side. Continue to cook for 4 to 5 minutes or until completely cooked. Remove salmon from the grill and rest for 5 minutes. Remove the skin and drizzle some Truly Teriyaki on top.


Grilled Chicken with All-Natural Pineapple Ginger

Boneless, skinless chicken breasts
Sliced pineapple (either fresh or canned)
Olive Oil
Simply Boulder Pineapple Ginger

Place chicken breasts in plastic bag. Pound the breasts with either a rolling pin or rubber mallet. This is optional, but will decrease the cooking time (makes the meat more tender) and will also make the meat more flavorful (it's easier for the marinade to penetrate the chicken). Pour enough Pineapple Ginger sauce in the bag to coat each chicken breast. Refrigerate the bag for 30 to 60 minutes.

Remove the chicken breast from the bag and discard the marinade. Place the chicken on a hot grill and cook 4-7 minutes on each side until the chicken is fully cooked. As the chicken is cooking use a brush to apply more Pineapple Ginger as a glaze. This will add more flavors and prevent the chicken from drying out.

While the chicken is cooking brush the pineapple slices with EV olive oil. Place on the grill and cook for approximately 3 minutes per side or until golden brown.

Remove the chicken from the grill and place on a serving tray. Place the grilled pineapple slices on top of the chicken.

Pour some Pineapple Ginger into a small bowl and heat in the microwave. Drizzle over the grilled pineapple and serve.
