Stir fry is one of my favorite things to make. Not only can it be extremely healthy, but it’s also great tasting and simple to make. This recipe calls for teriyaki sauce, but you can also use the Simply Boulder Coconut Peanut or Pineapple Ginger instead. Or a combination can be used such as teriyaki and coconut peanut.
Gluten free noodles (cooked according to directions)
Cut chicken into small strips, set aside. Dice bell peppers and onions and place in a separate bowl. Cut broccoli into small pieces and place in the bowl with the rest of the vegetables.
Drizzle a few tablespoons of olive oil in a large skillet or wok. Heat on medium high (or high with a wok) and add chicken when warm. Cook until all edges are golden brown which should be about 5-10 minutes depending on the size of the chicken pieces.
When the chicken is about fully cooked add the vegetables. Add enough Simply Boulder Truly Teriyaki to coat the chicken and vegetables well. Mix until the chicken and vegetables are coated with the teriyaki sauce. Cook about 10 minutes longer until the vegetables are tender.
Remove from heat and serve the chicken stir fry on top of the noodles.
