I think this is a great salad for the summer. Not only does it involve grilled chicken, but it’s also very simple and healthy. And like most of the recipes I post, its gluten free too.
Ingredients: 4 boneless and skinless chicken breasts, Simply Boulder Lemon Pesto, 8 cups spring mix, 1 cup sliced cucumbers, ¼ sliced red onion, ½ cup cherry tomatoes sliced in half
Directions:
Marinate chicken in a plastic bag with enough lemon pesto to coat it well.
Preheat grill
Remove chicken from plastic bag and discard bag. Grill about 5-10 minutes per side or until done. Remove from heat and set aside about 15 minutes or until cool.
Slice chicken in ½ inch strips.
To finish the salad place all ingredients in a large salad bowl and serve with Simply Boulder Lemon Pesto.
