Vegetarian Kabobs – First Recipe Contest Winner

This recipe was submitted by Pam from Corvallis, Oregon.  Congratulations Pam, you won a bottle of SimplyBottle Pineapple Ginger!  (It’s not too late for other people to submit recipes)  And as a note, I think your recipe will be delicious using the Pineapple Ginger also.

Ingredients:
Pineapple chucks
Red Onions, cut in squares
Tofu, cubed
Red or green bell peppers, cut in squares
Simply Boulder Truly Teriyaki
Wood skewers

 

Directions:

Soak skewers in water for 30 minutes

Marinate vegetables and tofu with Simply Boulder Truly Teriyaki.  Let sit for 30 minutes.

Alternate vegetables and tofu on skewers.  Place on grill or under broiler and cook approximately 2 minutes per side, until vegetables are tender.  Teriyaki can be occasionally brushed on the kabobs during the cooking process.
